Here’s an insight into the process of getting our oysters fresh to your door, quickly and whatever the weather!

Growing

Our oysters are grown on trestles in the salt marsh creeks of Thornham until they reach maturity.

Harvesting and sorting

They are then harvested and transported to our purpose-built depuration centre where they are washed, hand-sorted into sizes and placed in trays ready for depuration.

Depuration

They are depurated for a minimum of 42 hours to ensure they meet the exacting standards required by CEFAS and Environmental Health.

Packing and delivery

When we receive your order the oysters are washed and then packed in insulated boxes to be delivered to most UK destinations by a nationwide courier service.
